Spice Whole Wheat Cookies

Ingredients

  • ¼  cup of vegetable oil
  • ¼ cup molasses
  • ¼ cup of sugar
  • ¼  cup brown sugar
  • 2 eggs
  • 1 cup  whole wheat flour
  • 1 cup all-purpose flour
  • 2 tsp baking soda
  • ¼ tsp salt
  • 1 tsp ginger
  • 1 tsp cinnamon
  • 1 tsp cloves

Preparation

  1. In a bowl, whisk vegetable oil, molasses, sugar, and eggs until blended.
  2. In another larger bowl, mix the remaining dry ingredients: both flours, baking soda, salt, ginger, cinnamon, and cloves.  Make a well in the center and add the molasses mixture, mixing until thoroughly blended.
  3. Drop by tablespoon about 2” apart onto prepared cookies sheets.  Bake in preheated oven for 7-9 mins or until cookies are firm to the touch.  Cool on sheets for 5 minutes, then transfer to wire rack to cool completely.
