Ingredients
- ¼ cup of vegetable oil
- ¼ cup molasses
- ¼ cup of sugar
- ¼ cup brown sugar
- 2 eggs
- 1 cup whole wheat flour
- 1 cup all-purpose flour
- 2 tsp baking soda
- ¼ tsp salt
- 1 tsp ginger
- 1 tsp cinnamon
- 1 tsp cloves
Preparation
- In a bowl, whisk vegetable oil, molasses, sugar, and eggs until blended.
- In another larger bowl, mix the remaining dry ingredients: both flours, baking soda, salt, ginger, cinnamon, and cloves. Make a well in the center and add the molasses mixture, mixing until thoroughly blended.
- Drop by tablespoon about 2” apart onto prepared cookies sheets. Bake in preheated oven for 7-9 mins or until cookies are firm to the touch. Cool on sheets for 5 minutes, then transfer to wire rack to cool completely.
