Chicken Souvlaki, Greek Potatoes, and Greek Salad

Ingredients (chicken souvlaki)

  • 2 chicken breasts (cut into 1” cubes)
  • 1 lemon,  juiced
  • ½ cup  Olive oil
  • ¼ cup White wine-dry
  • ¼ cup soy sauce
  • 2 garlic cloves
  • 1 tbsp oregano
  • 1 medium onion,  cut into 1” cubes
  • 1 bell pepper,  cut into 1” cubes
  • ¼  tsp pepper
  • Salt to taste

Preparation

  1. In a large bowl, mix together lemon juice, olive oil, wine, soy sauce, oregano, garlic,  onion, bell pepper, salt/pepper, and meat. Stir to coat.
  2. Cover and refrigerate for 3 hours or overnight.
  3. Soak bamboo skewers well in water.
  4. Preheat grill on medium heat. Thread chicken/pork, peppers, and onion onto skewers.
  5. Cook for 10 to 15 minutes, or to desired appeal, turning skewers frequently for even cooking.

Ingredients (Greek potatoes)

  • 1 lemon, juiced
  • ⅓  cup  Olive oil
  • ¾ cup  chicken stock
  • 1 tsp Safron
  • 2 garlic cloves
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 5 medium potatoes, cut quartered
  • ¼  tsp pepper

Preparation

  1. Preheat oven to 350 degrees F ( 175 degrees C)
  2. In a small bowl, mix olive oil, chicken stock, minced garlic, lemon juice, thyme, rosemary, Safron, pepper, and potatoes.
  3. Pour the ingredients into casserole dish.
  4. Cover and bake for 1 hr in the preheated oven, turning occasionally, until tender but firm.

Ingredients (Greek salad)

  • ½ head romaine lettuce
  • ½ cup cherry tomatoes (diced)
  • ½ cucumber( diced)
  • ¼ cup bell pepper (diced)
  • ¼ cup sliced onion
  • 10 olives
  • ¼  cup crumbled feta cheese

Dressing

  • ¼ cup of olive oil.
  • 2 Tbsp fresh lemon juice.
  • ½  teaspoon fresh chopped garlic.
  • 1 teaspoon red wine vinegar.
  • ½  teaspoon dried oregano or 1 teaspoon chopped fresh oregano
  • Salt and pepper to taste

Preparation

  1. To make the dressing: Whisk the olive oil, lemon juice, garlic, vinegar, and oregano together until blended. Season to taste with salt and freshly ground black pepper. (Can be prepared 3 hours ahead. Let stand at room temperature. Re-whisk before using.)
  2. Combine salad ingredients: Combine the tomatoes, cucumber, onion, bell pepper, olives in a bowl. Toss with dressing. Sprinkle cheese over and serve.
