Blueberry Banana White Chocolate Oat Muffins

Serves 6 people


  • 1 ¾ cups all purpose flour
  • ¼  cup quick cooking oats
  • ½ sugar
  • 2 tsp baking soda
  • ½  tsp salt
  • 2 tbsp vegetable oil
  • 1 egg
  • 1 ½ cups mashed bananas
  • 1 cup frozen blueberries
  • ½ white chocolate chips


  1. In large bowl, stir together flour, oats, sugar, baking soda and salt.
  2. In a separate bowl, using an electric mixer, beat oil, egg, and banana until combined. Gently fold in frozen blueberries and white chocolate chips. Spoon into prepared muffin tins.
  3. Bake in preheated oven for 60 mins. Remove from the pan and let cool for 5 mins.
